wine making process

1. The first step is to remove the stems, that is, to remove the grape berries from the comb-shaped stalks. There is an unpleasant taste in the wine because the stems contain a particularly high amount of tannins.

2. Squeeze the fruit. When making red wine, grape skins and grape flesh are pressed at the same time, and the red pigment contained in red wine is released when the grape skins are pressed. Because of this, all red wines are red in color.

3. Juicing and fermentation. After juicing, the raw material for winemaking - grape juice can be obtained. With wine juice, good wine can be brewed. Wine is a product obtained through fermentation. After fermentation, the sugar contained in the grapes is gradually converted into alcohol and carbon dioxide. Therefore, during fermentation, there is less and less sugar and more and more alcohol. Through a slow fermentation process, red wines with delicate aromas are produced.

Fourth, add sulfur dioxide. To maintain the fruitiness and freshness of the wine, sulfur dioxide treatment must be added immediately after the fermentation process. Sulfur dioxide prevents the oxidation of wine caused by oxygen in the air. About 3 weeks after the new wine is fermented, the first settling and barrel change must be carried out. The second settling takes 4 to 6 weeks. The number of precipitations and the order of time are exactly the taste to be achieved.

5. After the wine has been stored in barrels for 3 to 9 months, it will be bottled. In the past, wine bottles were sealed with corks, and now (after 2001) many technologically innovative bottling plants are using new vacuum-sealed rotary wine bottles.
